The 2017 vintage was quite good. It followed a good vintage in 2016 which set healthy buds. The weather, vineyard health, and length of season was average to above avera

Vineyard Designation

Harvested on August 12th from Lost Draw vineyard in the high plains region of Texas

Winemaking

The juice was really tasty. This was inoculated and fermented for ~ 4 weeks at ~ 44 F We had additional juice that enabled us to fill and ferment a couple of barrels. Both the SS and barrel wines tasted big and powerful even after two rackings.

Brrel treatment 

This wine was fermented, racked, and aged in SS.

Blending and Aging

We bottled this wine in July of 2018 and did some blending trials with the barrel fermented Riesling and settled on a  ~ 10% of the barrel fermented and aged Riesling. Aged for nine months and racked twice with bentonite.

Tasting Note
Expressing fresh and botanical attributes fused with a core element of granny smith apple. Grown on the high plains, this Riesling shows elegant floral notes embolden with green apple peel and a strong mineral core. Strength and beauty in harmony. The finish is so clean but lingers the wild honey and citrus finish for minutes.

Food Pairings
Pairing this wine with any seafood would be a fine thing. For non-seafood eaters, try it with King Ranch casserole. You also can't go wrong with anything Thai.
